Palak khakhra and puri

Palak khakhra and puri

 

Palak khakhra recipe

Prep time: 5-7min        Cook time: 25-30 min          Total time: 30-37min  
Ingredients:
Palak leaves(spinach)
Wheat flour
Green chilli
Oil
Salt
Water
 1 cup
 2 cups
 1-2
 for frying
 to taste

Instructions:
1) Add palak,flour,salt,oil,green chilli and make a dough by adding   enough water.
2) Take a small of the dough and roll it thin like a roti.
3) After that, on a tawa cook it till it is somewhat hard by adding enough oil(1-2tsp)
4) Serve it with tea or just like that.

Note: The khakhra must not be soft like roti.

Palal Puri recipe


Prep time: 5-7 min         Cook time: 20-25min        Total time: 30-32min
Ingredients:
Palal leaves
Wheat flour
Salt
Red chilli powder
Haldi
Oil
Water
1 cup
2-3 cups
as required
1/2 tsp
1/2tsp
as required
as required

Instructions:
1) Add palak leaves to the wheat flour, also add salt,red chilli powder,haldi,water and mix it propoerly to make a dough.
2) Make small-small puris from the dough and fry all the puris.
3) Palal puri is ready and can serve with imli ki chutney or can have just like that.

Stuffed paratha

A quick and easy to make snack - stuffed paratha with a mild flavor and spices. The vegetables are also boiled so good for health. Less oily then the traditional parathas. Try this simple recipe.

Ingredients:
Green peas
Potato
Carrots
Wheat flour
Red chilli powder
Haldi
Maggi Masala
Butter
Salt
Oil
1/2 bowl
1 boiled
1 boiled
1 bowl
1/2 tsp
1/2 tsp
1/2 tsp
1 tsp
to taste
as required 

Instructions:
1) Boil potato,green peas and carrot in a vessel.
2) Drain the veges and allow it to cool.
3) Make a dough from wheat flour,oil, salt and water.
4) Now mash all the vegetables in a vessel and add salt,butter, red chilli powder, haldi, maggi masala.Mix properly.
5) Make small balls of the mixture.
6) Take a small portion of the dough and stuffed it with the balls and roll it like paratha.
7) In a non-stick pan, shallow fry the paratha.
8) Serve it with imli ki chutney or tomato sauce.


Bajri na vada 

Bajri or millet was included in regular diet by our ancestors. It is known to have a very high fiber content which is quite healthy. The farmers in India specially Gujarat, Rajasthan include bajra in their daily diet. 

Bajra helps in reducing cholesterol as it contains phytochemicals. It is noted for its high iron content. Moreover, it is gluten-free; so those who are gluten intolerant can include this miracle millet in their diet. Good for those suffering from diabetes and also promotes weight loss.

Ingredients:
Bajri
Jaggery
Sesame
Ginger
Red chilli powder
Yogurt
Salt
Oil

1tsp and also for frying

Instructions:
1) Take bajri and add jaggery,sesame seeds,grated ginger,red chilli powder,curd,salt and oil.
2) Mix well all the ingredients.
3) Take a small portion of the dough and make puri like shape.
4) Do the same with the rest of the dough
5) Fry till golden brown and serve hot with sauce or curd or green chutney.
Note: To make the shape like puri take some oil in hands.

Putu Mayam

Putu Mayam, is usually taken as breakfast or as snack. It's a simple recipe and also low calorie food as it requires only steaming the rice flour. 

The other two, jaggery and dessicated coconut are also healthy. So, it's a healthy breakfast option.

If you don't want to have the jaggery, then you can skip it also. It tastes great without jaggery also.

Ingredients:

 Salt
 Water
 Dessicated Coconut
 Jaggery
 250gm
 to taste

Instructions:
1) First of all, boil water and after u r sure its boiled enough turn off the stove and add riceflour,salt.
2) Mix it well and then take a small portion of it.
Note: Its consisitency must be of chakri's dough.
3) Take a small portion and place it in the chakri machine.
4) Make sev like structure:)))
5) Steam it and then serve it with coconut and jaggery.

Dhokla is a very common snack in Gujarat. People eat it with green chutney,sauce,amli chutney,etc..

Rava dhokla is a special version because dhoklas are normally made from  rice.This recipe in instant as no fermentation is required of the batter.

Ingredients:


Rava                                 250gm
Turmeric powder(haldi)   1tsp
red chilli powder              1tsp
cumin seeds(optional)
mustard seeds                   1tsp
lemon juice                       1-2tsp
yogurt                                2tsp
salt to taste
baking soda                       1tsp
green chilli                        1-2
ginger                                1/2
oil                                      2-3tsp
For garnishing:
Coriander leaves
                          

Method:

1) In a big vessel, add rava, haldi, lemon juice, yogurt, green chilli, ginger, coriander,salt,oil and water and properly mix the contents.
2) If want to add baking soda to make it fluffy then u can add it. I prefer without it only.
3) Leave the mixture for about 10-12 minutes and then steam it.
4) For seasoning, sprinkle some red chilli powder on the dhoklas.
5) Serve it hot with mango ras or chutney or tomato ketchup.

Sakkarpara is a common tea time snack in gujarati homes.

 It is made from wheat flour and sometimes refined wheat flour(maida). Sakkarpara are of diamond shapes or square mostly. There are a number of varieties in sakkarpara also like ajmawala sakkarpara,jeera na sakkarpara, and mari na sakkarpara. 

The recipe is quite simple for different varieties.

Ingredients:
Wheat flour
Jeera
Salt
Oil
Water
 250gm
1 1/2 tsp
to taste
for frying 

Instructions:
1) Make a dough combining the flour,salt,oil,jeera. The dough must be somewhat hard not soggy so add water carefully while preparing the dough.
2) Take a small portion of dough and make a rotli of it. Then, cut it into small pieces(diamond-shaped or square).
3) Fry all the pieces but don't burn them.
4) Enjoy the sakkarparas with tea or just like that.


Note: The dough that you made must not be too soggy else can't make crunchy sakkarparas.
