Vanilla and rose cupcakes

Cupcake recipe
Prep time:      Cook time: 25-30 min          Total time: 30-37min  
Ingredients for cake
Wheat flour
Oil
Sugar
Vanilla essence
Milk
Baking powder
Choco powder
Rose essence
Food color(orange,blue,red & green)
Chocolate rice
Chocolate chips
Colorful balls for decoration
Colored chocolate rice

Instructions:
1) In one bowl add flour,sugar,baking powder,baking soda and mix all these consistently.
2) In another bowl add milk,vanilla essence,choco powder,fresh cream and make a smooth mixture of all these ingredients.
3) Add this smooth mixture slowly to the dry ingredients.
4) Preheat the oven at 180 degrees
5) Take cupcake papers and fill those with these batter.
6) Bake it for 20-25 minutes.
7) Allow it to cool for at least 30 minutes.
8) With the help of a cone do creaming and decorate it with chocolate rice or colorful balls.

For the cream:

 1)To make the cream, take fresh cream or malai (can add some butter also), add sugar, vanilla essence,choco powderand whip it till smooth.
2) Can refrigerate the cream for good consistency.




Palak khakhra and puri

Palak khakhra recipe

Prep time: 5-7min        Cook time: 25-30 min          Total time: 30-37min  
Ingredients:
Palak leaves(spinach)
Wheat flour
Green chilli
Oil
Salt
Water
 1 cup
 2 cups
 1-2
 for frying
 to taste

Instructions:
1) Add palak,flour,salt,oil,green chilli and make a dough by adding   enough water.
2) Take a small of the dough and roll it thin like a roti.
3) After that, on a tawa cook it till it is somewhat hard by adding enough oil(1-2tsp)
4) Serve it with tea or just like that.

Note: The khakhra must not be soft like roti.

Ingredients:
Palal leaves
Wheat flour
Salt
Red chilli powder
Haldi
Oil
Water
1 cup
2-3 cups
as required
1/2 tsp
1/2tsp
as required

Instructions:
1) Add palak leaves to the wheat flour, also add salt,red chilli powder,haldi,water and mix it propoerly to make a dough.
2) Make small-small puris from the dough and fry all the puris.
3) Palal puri is ready and can serve with imli ki chutney or can have just like that.

Stuffed paratha

A quick and easy to make snack - stuffed paratha with a mild flavor and spices. The vegetables are also boiled so good for health. Less oily then the traditional parathas. Try this simple recipe.

Green peas
Potato
Carrots
Wheat flour
Red chilli powder
Haldi
Maggi Masala
Butter
Salt
Oil
1/2 bowl

1 bowl
1/2 tsp
1/2 tsp
1/2 tsp
1 tsp
to taste
as required 

Instructions:
1) Boil potato,green peas and carrot in a vessel.
2) Drain the veges and allow it to cool.
3) Make a dough from wheat flour,oil, salt and water.
4) Now mash all the vegetables in a vessel and add salt,butter, red chilli powder, haldi, maggi masala.Mix properly.
5) Make small balls of the mixture.
6) Take a small portion of the dough and stuffed it with the balls and roll it like paratha.
7) In a non-stick pan, shallow fry the paratha.
8) Serve it with imli ki chutney or tomato sauce.


Bajri na vada 

Bajri or millet was included in regular diet by our ancestors. It is known to have a very high fiber content which is quite healthy. The farmers in India specially Gujarat, Rajasthan include bajra in their daily diet. 

Bajra helps in reducing cholesterol as it contains phytochemicals. It is noted for its high iron content. Moreover, it is gluten-free; so those who are gluten intolerant can include this miracle millet in their diet. Good for those suffering from diabetes and also promotes weight loss.

Instructions:
1) Take bajri and add jaggery,sesame seeds,grated ginger,red chilli powder,curd,salt and oil.
2) Mix well all the ingredients.
3) Take a small portion of the dough and make puri like shape.
4) Do the same with the rest of the dough
5) Fry till golden brown and serve hot with sauce or curd or green chutney.
Note: To make the shape like puri take some oil in hands.

French bean fried rice

French bean or fansi ( in gujarati), is very nutritious as they are low in calories. They are an excellent source of minerals, vitamins like A, B1,B6,C and health promoting flavonoid such as beta carotene.

This recipe also contains carrot,garlic,cabbage,ginger. All these vegetables are very good for health like carrot contains beta carotene and vitamin A; cabbage is also low in calories; garlic good for kidney and ginger is an antioxidant. It also contains rice that is easy to digest.

Instructions:
1. In a frying pan, add oil and all the vegetables and stir fry.
2. Next, add salt to taste and red chilli powder and again stir fry.
3. Cook for 2-3 minutes and then add rice.
4. Mix properly and tasty fried rice is ready.

For creaming purpose:

Cocoa powder(dark)     3-4tsp
Sugar                             100gm
Butter                            50gm
Almond flakes              50gm



This morning we made( I and my mom) made our favorite- Lemon rice

The ingredients are quite simple
Rice
Curry leaves
Red chilli powder
Turmeric
Methi seeds
Lemon juice
Ginger
Green chilli
Salt
Oil
Jeera( cumin seeds)

Steps:
1) Cook 1 cup rice first with salt.
2) Now in a vessel add oil,jeera,ginger,chilli powder, green chilli, turmeric, lemon juice, methi powder and curry leaves and saute all the ingredients.
3) Turn off the flame and add rice; mix well everything and server hot with curd or chana.
